3 carrots, peeled
3 parsnips, peeled
2 tablespoons olive oil
¼ cup honey
salt and ground black pepper to taste
Preheat the oven to 350 degrees F (175 degrees C).
Arrange carrots and parsnips in a baking dish; drizzle with olive oil and toss to evenly coat. Pour honey over top and season with salt and pepper; toss again to coat.
Bake in the preheated oven until vegetables are very tender, about 40 minutes.
