Baby Bok Choy with Thai Peanut Sauce

Ingredients

    • 2 tablespoons creamy peanut butter

    • 2 tablespoons reduced-sodium soy sauce

    • 2 tablespoons water

    • 1 tablespoon Sriracha sauce

    • 1 medium lime, juiced

    • 1 (1 inch) piece fresh ginger root, minced

    • 1 clove garlic, minced

    • 1 tablespoon olive oil

    • 2 medium heads baby bok choy, halved lengthwise, or more to taste

    • salt and freshly ground black pepper to taste

    • ¼ cup chopped peanuts

    • ¼ cup chopped fresh cilantro

Directions

  1. Whisk peanut butter, soy sauce, water, Sriracha, lime juice, ginger, and garlic together for sauce and set aside so flavors can mix.

  2. Heat oil in a large, nonstick saute pan over medium-high heat. Sear the bok choy, cut-sides down, until they are starting to brown, 3 to 4 minutes. Flip them over and continue to cook until browned, 2 to 3 minutes more. Season with salt and pepper.
